Low Carb Rice-Cauliflower rice

This recipe for low carb rice is delicious! Please trust me on this, you will NOT miss the rice.

I am originally from the islands and rice is a main staple of our diet, so I am not kidding when I say that this is the best substitute for rice I have ever had!

Here is the Recipe

Ingredients

1 Head of Cauliflower (chopped using food processor, please see the video)
2 eggs (beaten)
1 tablespoon low sodium soy sauce
2 tsp sesame oil
1 stalk of celery (chopped)
1/2 of a carrot (chopped)
1/2 red pepper (chopped)
1/2 onion (chopped)
4 green onions (chopped)
1/2 cup green beans (I used frozen)
2 tbsp oil
salt and pepper to taste

Method:
1. Add oil to the pan and add the onions and saute for 2 minutes.
2. Add the cauliflower and fry for about 3 minutes.
3. Add the red pepper and the carrots and cook for 1 minute longer.
4. Move the cauliflower rice to one side and add 1 table spoon of oil.
5. Add the egg and scramble.
6. Mix into the rice
7. Add the green onions and mix into the cauliflower rice.

This is the best low carb rice, so tasty and so low in carb!

    Sorry for the delayed replay, the cauliflower is raw in the pan prior to making the rice.

  3. Do u cook the califlower rice prior? Boiled? Or raw in the pan when you brown it?

    I stumbled across your website searching for low carb recipes. I am someone who RARELY comments on anything online. I made the low carb “rice” using cauliflower. Who knew cauliflower could be so good? My T1 diabetic husband LOVES Chinese food and has to avoid it since it does a number on his blood sugar. I left out the peppers and green beans and added a little fish sauce. It came out fantastic! I saw you have a recipe for pork fried rice, which I will try next.

    Finally, I found someone who has tastes similar to ours! I am so excited to find your website and your recipes. I also made the frozen nutty caramel chocolate delight cookies with pecans (instead of peanuts) for my husband who loves butter pecan
    ice cream. What a great treat for him!

    You have some terrific recipe ideas that people can modify for their own needs/tastes.Thank you for making a low carb lifestyle delicious. I plan to try your pizza crust next. It sounds like it will be a lot better than the fake flour crusts! Pizza is another food my hubby loves but has to avoid…I am so glad you have some great alternatives.

    Hi Erica,

    They are related, but not the same. Chives are milder in flavor than green onions.

    Yes, they can be pretty much interchanged in any recipe.

    Chives are generally smaller in circumference than green onions, so you may wish to mince them a little finer

    I’m not a cauliflower fan, but I’m definitely going to try this receipe. The ingredients are easy to find and it sounds delicious. I have a question, are green onions the same as chives?
