Low Carb Fried Green Tomatoes!



Ingredients

4 green tomatoes
1/8 tsp cayenne pepper
1/8 tsp black pepper
1 1/2 cup Parmesan cheese
2 eggs
2 tablespoons heavy cream
1/2 cup olive oil

Method:

  1. Slice tomatoes into 1/4 inch pieces
  2. Top tomatoes with a pinch of salt  and let rest for about 10 minutes.
  3. In a plate add the Parmesan cheese and season with black pepper and cayenne pepper.
  4. Whisk  egg and cream together for the egg wash.
  5. Dip tomatoes in egg wash then in Parmesan mixture set aside.
  6. Heat oil on medium heat.
  7. Add the tomatoes and cook for 3-4 minutes and remove from pan .

Ingredients for the sauce:

1/2 cup mayonnaise

2 heaping tablespoons of sugar free sweet relish.

1 table spoon hot sauce (please feel free to  use less )

Mix ingredients together and serve with fried green tomatoes. Enjoy!

    I tried your fried green tomatoes recipe breaded in parmesan! It was delicious! It made me happy! Going to use parmesan as a breading for other things! Great idea. However, next time I’m going to try fry them w/o the oil and see how that goes.

    There’s probably enough fat in the cheese, to crisp them up!
