My family and I have eggnog every New Years eve. I am happy to share my recipe with you for this keto friendly delicious creamy Eggnog. You can leave out the alcohol if you like, or you can spike it up with whiskey:)
6 large egg yolks
1/2 cup pyure sugar free sweetener
2 cup heavy whipping cream
2 cups almond/coconut milk
2 cinnamon sticks
1 teaspoon ground nutmeg
1/2 tsp ground cinnamon
1/2 tsp ground clove
1/8 tsp salt
1/4 teaspoon vanilla extract
1 cup alcohol of choice ( I use Tom Sims Kentucky straight bourbon whiskey)
Method:
Whisk the egg yolks and sweetener together in a medium bowl until light and creamy.
In a saucepan over medium-high heat, combine the heavy cream, milk, cinnamon sticks, nutmeg, cinnamon, ground clove and salt. Stir often until mixture reaches simmer.
Add a big spoonful of the hot milk to the egg mixture, whisking vigorously. Repeat, adding a big spoonful at a time, to temper the eggs.
Once most of the hot milk has been added to the eggs, pour the mixture back into the saucepan on the stove.
Whisk constantly for just a few minutes, until the mixture is just slightly thickened (or until it reaches about 165 degrees F on a thermometer).
Remove from heat and stir in the vanilla extract.
Add the liqueur and whisk in
Pour the eggnog into a pitcher and refrigerate until chilled. It will thicken as it cools.
Serve with a sprinkle of nutmeg, and fresh whipped cream.
