1/2 cup unsalted butter, softened
6 oz. cream cheese, softened (I use Trader Joes)
3/4 cups Swerve (I use this confectioner’s type)
4 large eggs
2 tsp pure lemon extract ( I use this)
20 drops of liquid stevia (I use this)
2 cups blanched almond flour (I use the Costco Brand)
1 1/2 tsp baking powder
1/4 tsp. salt
Glaze
2/3 cups Swerve Confectioners’ sweetener.
3-4 tbsp. of heavy cream
1/2 tsp pure lemon extract
Method
Preheat oven to 350 degrees.
In a medium bowl combine the almond flour, baking powder and salt then set aside.
In a large mixing bowl using an electric hand mixer whisk the butter, cream cheese and sweetener until combined. Add the egg (one at a time) until well combined. Add the liquid Stevia and the lemon extract and combine.
Gradually add the flour to the cream cheese mixture and combine until you get a uniformed mixture.
Spoon the mixture into a parchment line baking dish and Bake for 45-55 minutes. Allow to completely cool. Top with the glaze mixture
Makes 12 slices 2.6 Net Carbs per slice 254 Calories.

Lemon Juice should work.
Can you substitute lemon juice instead of lemon extract?
I loved this cake, its the first cake I have had in months. I do not care for the glaze, I would prefer it plain, or sweetened blueberries served on top. thank you. I love your videos.
