Low Carb Baked Mac And Cheese Recipe -Using Cauliflower

Mac and cheese is one of my favorite dishes. Unfortunately I can no longer have the high carb version. So I created this low carb version using cauliflower. It’s perfect with BBQ chicken, perfect combo (lol) Here is the recipe:

1 large head of cauliflower
1/2 vegetable stock cube+ 1/2 teaspoon salt
1 tablespoon of butter
1 tsp of salt
2 eggs
1/2 tsp of Dijon mustard
1/2 cup heavy cream
1/4 cups of sour cream
1 tsp of salt
1/2 tsp black pepper
1/4 tsp of cayenne pepper
1 1/2 cup of sharp cheddar cheese
1/2 cup cheddar cheese

Method:
In a pot of boiling water add the vegetable stock cube and 1/2 teaspoon salt (this adds more flavor to the cauliflower) then add the cauliflower, steam or bowl the cauliflower for about 10-12 minutes. Drain the cauliflower. Add the cauliflower to a medium bowl and mix in the butter with the cauliflower then set aside. In a separate bowl whisk together the eggs, Dijon mustard, heavy cream, sour cream, salt and black pepper and cayenne pepper. Combine the cream mixture with the cauliflower florets. Add the 1 1/2 cup of sharp cheddar cheese and combine. Top with a 1/2 cup of cheese. Bake at 375 degrees for 30 minutes. Enjoy~

    Jay i have tried several of your recipes, tonight the chicken wings. I have not been disappointed yet. Thank you for your recipes their delicious and I usually have all the ingredients already. My husband found your site doing atkins. We find something almost daily to fix.

    Loved the recipe. I did a macro breakdown, and for this entire recipe which is 1244 grams total in weight there are 1670 calories, 39g of net carbs, 121g of fat, 86g of protein. I did a serving of 311 grams which was quite a bit and the macro breakdown was 417 total calories, 10g of net carbs, 30g of fat, and 21g of protein. I did this using MyNetDiary pro. Hope it helps. GREAT RECIPE! I’m trying to figure out a way to make it a little thicker and crunchier without messing up the great macros too bad. Maybe some bacon bits……idk tho. THANKS AGAIN!

    a quick guess on the carbs this mac and cheese dish has about 37 total carbs.divid by how many serving will get you your carbs per serving.

    i like all you recipes but can you please, let us know how many carbos in all ur dishes n compare them to the high carb recipe,its a a very important request,im sure many of us want to know,,like for example,how carbo is one serving of your cauliflower n cheeses recipe vs a serving of a regular mac and cheese,, ok thank you.

    Hi I love all your recipes I would like to share mine cornless bread made out of cauliflower
    2cups of rice cauliflower raw
    1/2 cup of coconut flour
    1 cup of cheddar cheese
    1/4 cup of cilantro
    1/2 teaspoon of garlic
    2 tablespoon of Parmesan cheese
    2 eggs
    Salt and pepper
    Mix all the ingredients feel free to add any other ingredient (onions,chives)
    Grease the container after putting the mixture of course I am really bad giving instruction but you get the idea lol thank you for all your delicious recipes
