I must admit that this recipe is a bit time consuming, and so worth the effect making it. I would suggest making the sauce a day prior to making the peppers. I will be making this again on Sunday for Cinco de mayo. This recipe is also Induction friendly!

Loved your Video! Can’t wait to try to make these! It’s going to be fun and yummy!! Thanks for sharing!
These were delicious but so much work! Yikes. I put them into a recipe calculator and got 8.8 carbs with 1.7 grams fiber for a net carb of 7.1. Also, the calories was 438 calories per serving.
Hi Dawn, I am happy to hear that you enjoyed it : )
Thanks Jay for such an awesome recipe! I love chili rellenos but hate all the low carb recipes I have tried. This one is so yummy! Tastes jus like the higher carb version! LOVE IT!!
This is sooooooo yummy! Thanks so much for posting this and going to the trouble of making it! I love Chile Rellenos but hate the low carb casserole ones and all the other ones I have ever tried have never been this good. These taste like restaurant quality. Thanks Jay!!
About 3 years off and on, nowadays more on than off. It’s been challenging : )
what are you using for the crust on the pizza?
Hi Jay How long have you been doing low carbs?
OMG! These look so great! Mexican food is my very favorite. I never thought I could eat these on the Adkins diet. Can you tell me how many carbs per serving? Thank you so much for all your wonderful recipe’s. I’m so glad I found you. 🙂
Welcome!! I wish you had emailed me when you were in Trini I would have given you many tips on how to do Atkins in Trini. For me it was easier doing it in Trini. I especially loved bhaji and cauliflower rice.
So happy that I found your site. Doing Atkins in Trinidad was rough, so I pretty much gave up and waited til I got back to the US. Really liking your recipes and can’t wait to try them all out.
Hi Barbo, I used olive oil for this dish.
Cannot wait to get some poblano peppers.
What kind of oil did you use?
Por Favor????
